Easy, yummy, healthy dinner idea

If you're like me, you're ready (or almost ready) to retire the sweets and heavy foods for something light and healthy this time of year. This is an easy recipe that, if you make a little too much of, can be re-heated for lunch the next day.There are many variations of this recipe but I think this is the easiest:

Panko/Dijon Salmon

1) Rinse two pieces of fresh, preferably organic, salmon (usually 6-8oz.per person is plenty)and grease the bottom of a pyrex or similar dish with a bit of olive oil
2) Pat dry with a paper towel and rub with Grey Poupon or other Dijon mustard
3) Cover with Panko (Japanese style bread crumbs)
4) Spray with fresh lemon wedges and cook with the cut lemon wedges and sprinkle with a little sea salt and fresh pepper
5) Bake at 350 for about 18-20 minutes
6) Serve with cooked lemon wedges
This is great with Asian salad or an ice-berg wedge with carrot-ginger dressing!
